{"id":39,"date":"2005-09-10T20:09:00","date_gmt":"2005-09-11T03:09:00","guid":{"rendered":"http:\/\/coffeejitters.net\/blog\/?p=39"},"modified":"2021-03-17T20:29:44","modified_gmt":"2021-03-18T03:29:44","slug":"persian-recipe-saffron-brownie-halveh","status":"publish","type":"post","link":"http:\/\/coffeejitters.net\/blog\/2005\/09\/10\/persian-recipe-saffron-brownie-halveh\/","title":{"rendered":"Persian Recipe: Saffron Brownie (halveh)"},"content":{"rendered":"<p>Syrup<\/p>\n<ul>\n<li>1 cup water<\/li>\n<li>1 tsp ground saffron dissolved in 1\/4 cup hot water<\/li>\n<li>1\/4 cup rose water<\/li>\n<li>1 cup sugar<\/li>\n<li>1\/2 tsp ground cardamom<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>2 cups all purpose flour<\/li>\n<li>4 tbsp unsalted pistashios for garnish<\/li>\n<li>1 1\/2 cups ghee<\/li>\n<\/ul>\n<p>make syrup: bring the water and sugar to a boil in a small saucepan. Remove from heat and add the saffron water, rose water and cardamom. Mix well and set aside.<\/p>\n<p>Make flour pase: in a large dep saute pan, toast the flour for about 10 minutes over medium head, stirring constantly. Add the melted butter and fry, mixing constantly with wooden spoon for 7 &#8211; 15 minutes, until golden brown. Remove the pan from the heat.<\/p>\n<p>Add syrup: gradually blend the syrup into the hot flour and butter mixture, stirring constatly with a wooden spoon for about 5 minutes. Transfer to a food procesor and process until smooth, about 5 minutes. The paste should set and become thick and smooth. <\/p>\n<p>Chill: spoon onto a plate and pack firmly with a spoon. Garnish with pistachios. Cover and chill for at least 2 hours.
