{"id":35,"date":"2005-09-10T14:45:00","date_gmt":"2005-09-10T21:45:00","guid":{"rendered":"http:\/\/coffeejitters.net\/blog\/?p=35"},"modified":"2014-07-04T17:55:33","modified_gmt":"2014-07-05T00:55:33","slug":"persian-recipe-pistachio-soup","status":"publish","type":"post","link":"http:\/\/coffeejitters.net\/blog\/2005\/09\/10\/persian-recipe-pistachio-soup\/","title":{"rendered":"Persian Recipe: Pistachio Soup"},"content":{"rendered":"<ul>\n<li>I cup unsalted, blanched pistachios<\/li>\n<li>1 shallot, chopped<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>6 cups chicken stock<\/li>\n<li>Kosher sald and pepper to taste<\/li>\n<li>1\/4 cup whole pistachios, blanched for garnish<\/li>\n<li>1 Tbsp olive oil<\/li>\n<li>2 leeks, chopped<\/li>\n<li>2 Tbsp rice flour<\/li>\n<li>2 Tbsp lime juice<\/li>\n<li>1\/4 cup orange juice<\/li>\n<\/ul>\n<p>Grind the pistachios in a food processor until fine.<\/p>\n<p>Saute aromatics: In a heavy pot, heat the oil over medium heat. Add the shallot and leeks, saute for 5 minutes and then add the garlic. Saute until very fragrant.<\/p>\n<p>Simmer: Add the rice flour, stirring constantly to make a paste. Add the chicken stock and bring up to a boil. Add the pistachios, salt and pepper and reduce the heat to low. Simmer for 45 minutes, stirring occasionally. Add the lime and orange juices.
